Tennessee rule 1200-23-01-.06 (physical facilities) requires floors that are smooth, durable and easily cleanable, and non-absorbent in food preparation areas, walk-in refrigerators, warewashing areas and toilet rooms. Floor-wall junctions must be coved and carpet is restricted in those spaces.
Davidson, Hamilton, Knox, Madison and Shelby counties run their own food inspections under state contract; elsewhere the Tennessee Department of Health inspects.
